Seriously good vegetarian meal!
8 oz grain free pasta (or whatever you want to use, I used lentil spaghetti)
8 oz. baby bella mushrooms, sliced
1 medium onion, sliced
1-2 garlic cloves, minced
1 tsp basil
1 tsp oregano
Marinara sauce (homemade or in a jar)
Parmesan cheese (or nutritional yeast)
Saute the mushrooms and onion in a couple of tablespoons of water. Keep adding a drizzle of water to keep it from sticking. Saute over medium low heat for 8-10 minutes. Add garlic, basil, and oregano for the last 1-2 minutes.
Meanwhile, bring a pot of water to boil for the pasta. Drop passta when it boils and cook per instructions.
Heat marinara sauce. Add the mushrooms and onions to the sauce. Continue cooking for 3-4 minutes. Drain pasta and add to the sauce pot. Let the pasta simmer for a minute or two.
Top with Parmesan or nutritional yeast, if desired.
